You know those people who wake up at the crack of dawn, looking like they’ve just had a makeover, with their hair in perfect form and a glow in their cheeks… They’ve done a yoga class before 6:30am, take long languid showers and still have plenty of time to make themselves a delicious healthy breakfast from scratch, before gliding out the door to work, with a freshly made smoothie in hand, perfect-barely-there makeup on their glowing faces and some kind of life enhancing podcast in their headphones….

Yep. That’s not me.

I’m the one crashing about in the morning, like a newly born rhino, trying to find a pair of clean tights/socks/pants, grabbing an old banana as I’ve run out of time to have a proper brekky, jumping on the tube with my makeup half done and inevitably getting hungry around 10:30, in the middle of a meeting, and wishing I was more like that girl I’d seen on the tube that morning, with her perfect makeup/smoothie/podcast.

I would love to be one of those folk who are one step ahead all the time. I aspire to do my Christmas shopping in October, rather than on Christmas Eve (just me?)…and I dream of making my week’s meals on a Sunday night… but in reality, I know myself well, and to try and change everything at once just won’t work. However, small steps is the name of the game, and thanks to Quaker Oats and their Overnight Oats, I’ve started gaining a little bit more time each day… just for me.   

I prep my breakfast the night before, simply by soaking the oats, so when morning arrives, it’s a quick assembly of delicious ingredients, leaving me around 10 minutes each day to dedicate to my new passion – gardening.

I should clarify – I am terrible at gardening. I have no idea what I’m doing and I’m on a steep learning curve… but thanks to my overnight oats and gaining over an hour each week, I’m learning something new every day. I’m deadheading roses, I’m on serious weed patrol, and I’m loving every minute. It’s my own version of meditation, and the calm and sereneness I feel amongst the shrubbery, stays with me as I set off into the world, with my tummy full of delicousness.       

By prepping my breakfast the night before, I have an overwhelming sense of achievement each morning. I feel more organised, more prepared and more in control. It’s such a small thing, but it’s made an enormous difference.

I always knew that oats had super powers, but who knew that they could actually conjure me up more time?

Not me. It’s all quite brilliant.

40g Quaker Traditional Rolled Oats
100ml unsweetened almond milk
1tsp desiccated coconut (and more to sprinkle on top)
1sp flaked almonds
Whole almonds – I like loads but use as many as you wish
3 tbsp plain yoghurt
Dollop of your favourite jam
Your favourite berries for layering & topping

Soak the oats the night before in the almond milk and assemble all the other ingredients in layers – in whichever order you fancy. That’s it. Easy peasy. Eat up and enjoy being one step ahead for the rest of the day.
